In the rare moments that Head Chef Tony has in between cooking and training apprentices, there is time to enjoy the finer things in life like great wine and dining out. Here's what Tony's up to at the moment...
Early spring sees the start of the season for growing sorrel. Here is a recipe for our well-known sorrel tart with smoked trout, dill and tomatoes. This is a beautiful and light dish perfect for enjoying with a glass of white wine for lunch during the warmer months.
If the promise of warmer weather, cool bottles of white wine enjoyed with lighter summer salads isn't enough to be excited about, for those of you who haven't heard, our restaurant has been blessed to be awarded with the title of Best Regional Restaurant for 2011 by the Sydney Morning Herald's Good Food Guide. We have also received a second chef's hat, which means Monique and Tony can each wear one!
